White Hart Deer

Raymond Blanc, OBE Chef Patron
“At Le Manoir aux Quat’Saisons, we always look for the very best, hence we have been using Capability Graham for the supply of our venison and, of course, know Brett Graham well and fully understand his values.
It is really exceptional quality produce; the deer have a natural diet; the best wild habitat without stress. We use both the saddle and the belly, which is hung for at least two weeks. This gives the meat the richness of flavour and tenderness. I know that it will always give a truly great experience for our guests.”
Capability Graham deer originate from its deer parks and the wild.
The spectacular herds comprise rare White Hart deer. Species include Red, Fallow, Japanese Sika and Axis. They reside at Aynhoe Park, Oxfordshire, Boughton House, Northamptonshire, parks within Berkshire and other historical estates throughout the UK.
The deer are fed a low-impact diet, which mainly consists of pasture and hay. The land and deer are free from chemical input resulting in an exceptionally low carbon footprint.
Wild game meat such as venison has numerous nutritional advantages as an incredibly lean protein source with a low fat content. It is full of essential vitamins and minerals such as vitamin B12, iron and zinc.
“Harvesting wild animals has its challenges and we work closely with a small group of game managers and deer stalkers, so we know exactly where all our deer are sourced.”
Alex Nielsen, Deer Manager

As head of deer management, Alex Nielsen offers his extensive experience, mastery and commitment to the successful development of the deer and venison at Capability Graham.
Alex promotes the harvesting of wild deer in their natural habitats, which is a vital part of maintaining the ecosystem. It also requires any overpopulation to be carefully balanced and managed in order to reduce the impact on the environment. His astute, instinctive and well-informed approach enables him to continually harvest the right deer, in the right place, at the right time of the season. This respects the venison from start to finish, and enhances the condition and quality of this exceptional product.
Capability Graham venison is available via Lake District Farmers.

“Wild deer venison is one of the finest organic products. It is the ultimate sustainable protein – nothing comes close. Eating more wild deer from woodlands, heathlands and parklands is a vital evolution. Deer in their natural habitats are required to balance the natural ecosystem.”
