Jersey Cows
Capability Graham selects retired Jersey dairy cows from small herds ranging from 4-9 years old.
These special cows are fed with minimal grain, making up only 15% of their diet.
The remainder of their food consists of the rapeseed meal from the oil production, along with silage made from both clover and grass on the Shropshire farm.
After a minimum of 120 days, there is a significant transformation in these animals, resulting in an increase in intramuscular fat and improved confirmation.
Capability Graham Jersey beef is available via Lake District Farmers.

Angus Hawkins, Cattle Manager
“The conversion from a cull cow to an animal that stands up to the finest beef makes this project not only positive in terms of sustainability but also adds an alternative to the mighty Belted Galloway, Shorthorn and Blue Grey. The Jerseys have intricate marbling, delicious yellow fat and make superb air-dried beef.”
